Can’t Leave Alone Bars

A buttery crumb crust, topped with a creamy fudge layer. These bars are so good, you can’t eat just one. Which is why we call them “Can’t Leave Alone Bars”.

Need some bars in a hurry? Correction…..need some REALLY fudgy bars in a hurry? Look no further! These “Can’t Leave Alone Bars” are the ticket! All the items you need are probably already in your pantry and they go together so quickly that you can whip them up at a moment’s notice. Because they are so easy, these are in my repertoire of  “last minute baked goods” that I make when friends are coming over.  

But the thing that makes them even better? They look and taste like something special! (Like something you spent A LOT more time baking).

They start with the convenience of a cake mix. I typically use a white, yellow or butter-flavored cake mix. This is mixed with eggs and oil to make a crumbly crust mixture. A little over half of the crumbs are pressed in a pan. Then you simply melt a package of chocolate chips, sweetened condensed milk and a little butter together to make the super-creamy fudge layer.

The melted chocolaty goodness is poured over the crust layer and topped with the remaining crust crumbles. You pop the pan in the oven and bake it for a quick 20 minutes and  TADA! It’s a perfect combination of a tender vanilla crust with a thick fudge layer.

If you dust them with powdered sugar just before serving, they are even prettier. They’re perfect for that cookie platter you are taking to book club or any other activity that requires a little sweet treat.

Can’t Leave Alone Bars


  • 1 18.25-oz. pkg white cake mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 14-oz. can sweetened condensed milk
  • 1 6-oz. pkg. semi-sweet chocolate chips
  • 1/4 cup butter cut in cubes
  • -powdered sugar


  1. Heat oven to 350 degrees F. Lightly grease 9x13-inch pan; set aside.
  2. In large bowl, combine the dry cake mix, eggs and oil; mix well.
  3. Press two-thirds of the dough into prepared pan; set aside remaining dough.
  4. In medium microwave-safe bowl, combine sweetened condensed milk, chocolate chips and butter. Microwave on high, 45 seconds; stir; microwave 45 seconds longer, or until smooth.
  5. Pour chocolate over crust layer in pan. Drop teaspoonfuls of remaining dough over chocolate layer.
  6. Bake for 20-25 minutes, until lightly browned. Cool completely. Sprinkle with powdered sugar if desired.
