Caramel Apple Crisp

We have had some relatively mild weather here in the Midwest. But today, Mother Nature came in in with a blustery reminder that it IS December and we DO live in Minnesota! Although apple-picking season is long gone, apple crisp is always a welcome dessert on a chilly day. Nothing warm up the house more than than the sweet smell of apples and cinnamon.

Like many of you, my favorite part of apple crisp is the crumbly topping. This recipe takes that fondness to a whole new level because there is a bottom brown sugar and oatmeal crust AND a crunchy, nutting brown sugar topping. YUM!!! And that’s not all! The tart apple layer that is sandwiched in the middle uses caramel bits and whipping cream to create an apple crisp that is over the top! Can you tell I am excited about this recipe?

I’ve made this recipe multiple times this fall and every time, somebody asks for the recipe! Serve it warm with vanilla ice cream and I am sure you will get requests as well! Happy Baking!

Ingredients

  • Bottom Crust:
  • 6 tablespoons butter, melted
  • 1 cup quick cooking oatmeal
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • Filling:
  • 6 medium apples, peeled, cored and sliced (about 6 cups)
  • 2 tablespoons sugar
  • 1 1/2 teaspoons cinnamon
  • 1 (11-oz.) pkg. caramel bits
  • 1/3 cup whipping cream
  • Topping:
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 3/4 cup chopped pecans
  • 1/2 cup butter, melted

Instructions

  1. Heat oven to 350 degrees F.
  2. In medium bowl, combine all crust ingredients until well blended. Press mixture in bottom of 2-quart baking dish.
  3. In medium bowl, combine apples, 2 tablespoons sugar, and 1 1/2 teaspoons cinnamon. Toss lightly to coat.
  4. Spoon apple mixture over crust in dish.
  5. Sprinkle caramel bits evenly over apples. Pour whipping cream over all.
  6. In medium bowl, combine all topping ingredients until crumbly. Sprinkle topping mixture evenly over all.
  7. Bake at 350 degrees F. for 35-40 minutes, until topping is golden brown and filling is bubbly.
  8. Remove from oven and serve warm with ice cream or whipped topping.
